Maple syrup iles flottantes in 5 minutes!
It’s the second time now that I’m making îles flottantes and they’re really good, Niko loves them! It’s not really good for your weight for but who cares, it’s delicious!
The first time I’ve made them, it was because I had two egg yolks left after making a Mornay sauce and I did not want to waste the eggwhites!
I use readymade “creme anglaise” (I know it’s not ideal but that’s why it’s a quick recipe) that I find in Carrefour with the dairy products (see picture). You might be able to find it in the UK or USA. It’s very nice and not too expensive (a little more than a euro).
How do I prepare them?
I put the “creme anglaise” in two bowls and then I beat the eggwhites with an eletric whisk. I think only one is actually enough! To do this well, you need to go slow at first, add the sugar (more or less 30g I would say) and then increase the speed until the eggwhites are stiff. Afterwards, I transfer the eggwhites on top of the cream with a spoon. I don’t like liquid caramel so I use maple syrup instead and it’s as good as caramel! Finally, I put the bowls in the fridge. Generally, I make them just before we eat and I take them out in time for dessert (so about 15 minutes in the fridge).
To sum up you will need:
- Electric whisk
- Readymade creme anglaise
- 2 eggwhites
- Some sugar
- Some maple syrup
